Zucchini Sticks

I came across this recipe online while trying to find a healthier alternative to cheese sticks, which I LOVE!!! So I thought I would try it out, and I think I found the perfect replacement. With a few adjustments of my own, these little babies are perfect for dipping in your favorite marinara sauce. I have yet to try these with any other dips, but can't wait to try! Delish!!!

3 servings 2 pts per serving

3 Zucchini cut into sticks
1-2 Egg whites (depending on egg size and zucchini size)
1/3 C bread crumbs (I like Italian style)
2 Tbs Parmesan cheese
cooking spray
1/4 tsp garlic powder
salt
pepper

Beat egg white with salt and pepper and set aside. In another bowl or baggie combine crumbs, cheese and garlic powder. Spray cookie sheet and set aside. Dip zucchini in egg mixture and coat in crumb mixture. Lay on a cookie sheet and spray the top of the zucchini with cooking spray. Bake at 425 for 20-25 min or until golden brown. Serve with marinara. (add extra pts for marinara)
