Black Bean Taco Pizza

This pizza is SO GOOD! It is such a nice change from your regular pizza too! One pizza makes 6 servings and is great with a side salad.

1 Tbs cornmeal
1 pkg. pizza crust mix (or your own recipe)
1 botle taco sauce (I use taco bell mild sauce)
2 medium tomatoes, seeded and chopped
3/4 cup canned black beans
1/2 cup frozen corn
1 can chopped green chilies
2 green onions, chopped
1 1/2 cups shredded reduced fat Colby Monterey Jack cheese.
Reduced fat sour cream, Cilantro and Lime

Coat a 12 inch pizza pan with cooking spray; sprinkle with cornmeal. Prepare pizza dough according to package or your recipe and press onto pan. Bake at 450 for 7 min. or until lightly browned.
Spread with taco sauce. Top with tomatoes, beans, corn, chilies, onions and cheese. Bake for 10 min. or until cheese is melted and crust is golden. Serve with sour cream, cilantro and lime. I really enjoy rubbing the lime along the crust and sprinkling with salt. Yum
Adjust ingredients to your liking.

Frozen Peach Yogurt

This recipe is good and its good for you.
Makes (6) 3/4 C servings

I liked this recipe, however, it tasted of too much vanilla for my taste. Next time I make it I will experiment with plain or flavored yogurt and possibly other fruits as well. I am sure this recipe would be fairly flexible.


4 medium peaches, peeled and sliced
1 envelope unflavored gelatin
1 C FF Milk
1/2 C sugar
Dash of salt
2 1/2 C FF vanilla yogurt (again I would experiment w/ other flavors or plain)
2 tsp vanilla extract

Place peaches in a blender and blend until smooth. In a sauce pan, sprinkle gelatin over milk: let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. (this will take a minute) Remove from the heat: stir in sugar and salt until sugar dissolves. Add the yogurt, vanilla and reserved peaches.

Fill cylinder of ice cream freezer 2/3's full; freeze according to the manufacturer's directions. When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hrs before serving.

2/3 C has 149 Cal, 1g fat

100 Calorie Chocolate Cupcakes


I found this recipe at www.medicinenet.com and made them just yesterday. They are light, fluffy and just the right size. These will definitely get you your chocolate fix without the guilt.

2 pts per cupcake
Makes 24


* 18oz box devils food cake mix
* 1 1/3 C water
*1/2 C fat free sour cream
* 5 large egg whites (or 3/4 c substitute)
* 1/4 C powdered sugar

Beat cake mix with water, sour cream and egg whites in a medium sized bowl for 30 sec. on low. Increase the speed to medium and beat 2 min. scraping the bowl occasionally. Divide batter into lined cupcake pan. (You must line your pan. These babies are so low in fat that they will stick to your pan if you just spray it.) Bake 17 min. at 350 or until an inserted toothpick comes out clean. Dust with powdered sugar and let cool. Enjoy!!!

Fruit Smoothie

2 pts makes one serving

1 C non-fat plain yogurt
1 C crushed ice
1 1/2 fresh or frozen fruit
1 Tbs honey
2 pkg splenda

Blend and serve.

Peach Smoothie


3 pts makes one serving

1 C. non-fat vanilla yogurt
1/2 C fresh peaches
1/4 C orange juice

Blend and serve

Deluxe Raspberry Banana Smoothie

This delicious and healthy smoothie is filling and refreshing. A perfect breakfast that not only gets in a lot of fruit, but also has wheat germ which is high in fiber and protein.

Makes 1 serving. 5 pts

1/2 C frozen raspberries
1 small banana or 1/2 large banana
2/3 C unsweetened pineapple juice
1/2 C ice
2 Tbs plain low-fat yogurt
3 tsp wheat germ
1 tsp honey

Place all ingredients in blender and blend till smooth. Pour into a glass and serve immediately.
